Zoey gets Prize for Back Hand Spring

Today Zoey came home from gymnastics and says I got something better than a sucker I got a prize for doing my back hand spring! I was pretty shocked. She really wanted to show me that she could do it and I told her she needed to wait til we get a mat because I didn’t want her to get hurt. She insisted that she could do it and then did it, but could'nt land on her feet. I told her to just wait before she gets hurt and just then she landed and skimmed her head on the ground. She was so bummed she couldn’t do it for me. She chose a wet hair brush for her prize and it has a scent on it, it smells like raspberries.   Cutest brush ever!

Lasagna

Easy Lasagna

This is the Lasagna recipe I use all the time!

5 Cups Spaghetti Sauce
1 pound lasagna noodles, uncooked
1 1/2 pounds ground turkey or beef, uncooked (I use ground turkey)
1 cup diced onions (optional) I"m not a fan of onions but my husband is
1 1/2 cups of hot water
1 large container cottage  cheese
8 slices American Cheese
8 ounces of mozzarella cheese
1/2 cup grated Parmesan Cheese

Pour  1 1/2 cups sauce into a greased pan (extra deep, 9X13 or larger). 
Add a layer of uncooked noodles, overlapping them and  1/2 the meat in small chunks
Sprinkle with onion
Mix about 1/2 cup of the the hot water with the cottage cheese, and spread this over the previous layers. 
Cover with 1 1/2 cups of sauce, add another later of noodles, American cheese and the rest of the meat.
Cover with the last two cups of sauce, press down on the lasagna to remove air pockets, and pour the rest of the hot water over the lasagna. (I use the hot water to rinse spaghetti jar). 
Cover with foil and bake at 350 for 1 1/2 to 2 hours
Remove foil, sprinkle with mozzarella cheese and Parmesan cheese and bake for another 20 minutes. 
Let stand before cutting and serving. May be made the night before, refrigerated, and baked the next day.
